Feta & Bacon Stuffed Chicken w/ Mashed Sweet Potatoes & Red Peppers!

Last night’s dinner was delicious!!  While Mike slaved away in the kitchen preparing the Feta & Bacon Stuffed Chicken from this recipe over at allrecipes.com, I plopped on the couch and yelled cried at the Patriot’s game.  

To make the chicken dinner healthier we substituted ingredients and used whole wheat flour, reduced fat cream cheese, whole wheat bread crumbs, and also had a ligher version of mashed potatoes on the side.  Mike’s version is not only healthier but it tastes so friggen good! :D 

Mashed Sweet Potatoes w/ Red Peppers


  • 2 large peeled sweet potatoes
  • 1 red pepper
  • about 1/2 cup almond milk or low fat milk
  • 1 tablespoon butter
  • couple dashes of cumin
  • salt & pepper to taste


1) Microwave the peeled sweet potatoes until soft (8-10 minutes).

2) Mash the potatoes in a medium size bowl and add the diced red pepper, milk, butter, cumin, and salt and pepper.

3) Spoon the mix into a serving dish and heat in the oven at 375 degrees for about 20 minutes.
